This course examines the politics of how food is produced, marketed and distributed in the United States, with attention to how the American food system has changed since World War II. The ethics and nutritional and public health implications of current agricultural policies and practices are looked at carefully, as are the environmental impacts of current practices. The impact on international food prices and markets and world hunger are also examined.

Course Structure

The course is asynchronous. The course is divided into 5 units, one unit per week. Each unit will include 1 written assignment and 3-4 quizzes. The written assignments will typically be 1-2 pages. For each quiz students will be expected to watch a recorded lecture (most are approximately 30 minutes) and read assigned pages of the textbook (most are approximately 5 pages). The quizzes are intended to be closed book / note and therefore there is a set time limit for each. The formula used to calculate time for quizzes is 1 minute per multiple choice and 1 minute for each point of a short answer question, generally each quiz takes 10-20 minutes. You must complete the quiz individually. To ensure this, each student will receive a randomized batch of questions from a central bank. You will each receive a quiz containing questions covering the same material, and of the same difficulty, but it will not be the same quiz your classmates receive.

The UNHM internship places students in a variety of business and organizational settings under the direction of a faculty adviser and workplace supervisor. Students fulfill the obligations of the workplace internship plan, as well as complete individually-designed projects of academic merit under the direction of UNH faculty.
